{"id":3809,"date":"2014-06-26T20:57:25","date_gmt":"2014-06-26T18:57:25","guid":{"rendered":"http:\/\/tigernuts.proyectosbeta.com\/balsamic-rhubarb-tartlets-tigernut-crust-2\/"},"modified":"2021-07-26T18:40:10","modified_gmt":"2021-07-26T16:40:10","slug":"tartelette-rhubarbe-balsamique-au-souchet-49","status":"publish","type":"post","link":"https:\/\/www.tigernuts.com\/fr\/blog\/tartelette-rhubarbe-balsamique-au-souchet-49\/","title":{"rendered":"Tartelette \u00e0 la rhubarbe balsamique et au souchet"},"content":{"rendered":"<p>Pour 4 tartelettes :<br \/>\nPour la p\u00e2te :<\/p>\n<ul>\n<li>150 g de farine de souchet<\/li>\n<li>50 g de chair d&rsquo;avocat<\/li>\n<li>1 c. \u00e0 s. de pur\u00e9e d&rsquo;amandes<\/li>\n<li>1 c. \u00e0 s. de sirop d&rsquo;agave<\/li>\n<\/ul>\n<p>Pour la rhubarbe :<\/p>\n<ul>\n<li>700 g de rhubarbe<\/li>\n<li>10 cl de vinaigre balsamique<\/li>\n<li>3 c. \u00e0 s. de sucre complet<\/li>\n<\/ul>\n<p><strong>La veille, pr\u00e9parer la rhubarbe <\/strong>: Mettre le sucre dans une casserole et faire chauffer jusqu&rsquo;\u00e0 obtenir un caramel. Hors du feu, verser doucement le vinaigre balsamique, laisser bouillir quelques minutes puis \u00f4ter du feu.<\/p>\n<p>Eplucher la rhubarbe et la couper en tron\u00e7ons de 3 \u00e0 4 cm. La placer dans un plat creux, verser le caramel au balsamique dessus et m\u00e9langer pour bien enrober.<\/p>\n<p>Laisser mariner au frais 12h, en remuant de temps en temps pour bien impr\u00e9gner l&rsquo;ensemble des morceaux.<\/p>\n<p><strong>Le lendemain, pr\u00e9parer la p\u00e2te<\/strong> : Tamiser la farine de souchet dans un saladier.<\/p>\n<p>Mixer la chair de l&rsquo;avocat avec la pur\u00e9e d&rsquo;amandes et le sirop d&rsquo;agave pour obtenir une texture bien lisse. Verser ce m\u00e9lange dans la farine et travailler du bout des doigts jusqu&rsquo;\u00e0 obtenir une boule. R\u00e9server au frais.<\/p>\n<p><strong>Faire cuire la rhubarbe <\/strong>: Faire chauffer une po\u00eale, y placer la rhubarbe avec sa marinade et la faire cuire dans son jus en remuant de temps \u00e0 autre, jusqu&rsquo;\u00e0 ce que les morceaux de rhubarbe soient tendres. Si cela attache trop, ajouter un fond d&rsquo;eau.<\/p>\n<p>Pr\u00e9chauffer le four th 6-7 (200\u00b0C).<\/p>\n<p><strong>Confectionner les tartelettes<\/strong> : S\u00e9parer la p\u00e2te en quatre parts \u00e9gales, en faire des boules et les \u00e9taler en rond sur une \u00e9paisseur d&rsquo;environ 2-3 mm. Placer chaque rond p\u00e2te dans un moule \u00e0 tartelette (ou un petit moule rond) graiss\u00e9, r\u00e9partir la rhubarbe au milieu et rabattre les bords sur la garniture.<\/p>\n<p>Faire cuire une dizaine de minutes puis \u00e9teindre le four et poursuivre la cuisson encore 10 \u00e0 15 minutes.<\/p>\n<p>Laisser reposer un petit peu avant de d\u00e9mouler, le temps que la p\u00e2te se raffermisse, puis sortir les tartelettes des moules et les faire refroidir compl\u00e8tement sur une grille avant de d\u00e9guster.<\/p>\n<p><img fetchpriority=\"high\" decoding=\"async\"
