Roasting offers very interesting advantages and substantial differences compared to raw tiger nuts:

  • Enhanced Flavor, Aroma, and Texture: Maillard reactions and sugar caramelization generate unique aromatic compounds, resulting in a deeper flavor and a characteristic golden tone. They also provide increased crunchiness and sweetness, elevating the sensory experience.
  • Safety and Quality: The roasting experiments we conducted, at relatively moderate temperatures, show very promising acrylamide results, with only slight increases, ensuring a safe product that complies with current regulations.

Thanks to these advances, our new developments, including flours, diced pieces, and slices, offer a richer and more enjoyable experience while preserving the natural properties that make tiger nuts such a special ingredient.
